Time is moving fast. So fast, that believe it or not, we have already sped by Halloween and are heading straight towards Thanksgiving and the holidays. The holiday season is a time to reminisce over the past years. Remember grandma's famous apple pie or your mom's sweet potato casserole? Did Norwood football win their big Thanksgiving game in a memorable way? Perhaps you got engaged or remember volunteering your time handing out Thanksgiving dinners to those less fortunate. My mom, Kathleen Flanagan (also a life-long Norwood resident) has the BEST Squash Souffle recipe! Dare I say this dish beats out mashed potatoes as my favorite side during the holidays? Squash Souffle Ingredients: 2 packs frozen cooked butternut squash thawed 1/2 cup sugar 1/4 cup brown sugar 1 cup flour 6 eggs 4 cups milk 1/4 lbs unsalted butter melted (1 stick) 2 tsp salt Nutmeg for garnish Directions: At high speed, whip eggs until thick and creamy; at low speed, add sugar, flour and squash. Mix to blend, and then slowly add milk, butter and salt. Pour mix into a buttered 9 x 13 oven-proof baking dish, sprinkle with nutmeg and bake at 350 degrees F for 1 to 1 1/4 hours.
